Comfort food! Full of good quality plant proteins and delicious as well :)
This is a super recipe to make in advance, sure to satisfy even the hungriest tummies!
1 brown onion, diced
2 carrots, sliced
2 stalks of celery, sliced
150g button mushrooms, halved
4 garlic cloves, crushed
Sprigs of fresh thyme
2 tablespoons soy sauce or tamari
4 or 5 medium potatoes, peeled and cut into quarters
1 400g can lentils
1 400g can whole tomatoes
3 cups vegetable stock
Salt and pepper to taste
Start your mashed potatoes, by boiling the water and cook them as you prepare the rest of this recipe.
Saute the onion until softened, add the garlic for another minute.
Add mushrooms, celery, carrots and gently for about 5 minutes.
Add the lentils and most of the thyme, save some for a garnish.
Once the potatoes are mashed, add them evenly to serving dishes and top with stew.
