Directions
Start your mashed potatoes, by boiling the water and cook them as you prepare the rest of this recipe.
Saute the onion until softened, add the garlic for another minute.
Add mushrooms, celery, carrots and gently for about 5 minutes.
Add the lentils and most of the thyme, save some for a garnish.
Once the potatoes are mashed, add them evenly to serving dishes and top with stew.
