Combine water, rice, raisins, cinnamon, salt and sugar to a saucepan, set on a high heat. Bring mixture to a boil and then reduce to a simmer, covered, until water is absorbed and rice is cooked, approx 15 mins.
Stir in the lemon zest and fork through. Serve. Enjoy!
