Remove the husks and all the silk threads from the corn cobs. In a bowl, place the ginger, garlic, chillies, peppercorns and water, mix well
Roll each cob in the spice mix and place in a steaming basket, lined with banana leaves or baking paper
Place the basket over a wok or pan of boiling water, cover and steam for 10-20 mins (depending on the size of the corn), or until corn is tender, drain. Sprinkle with fish sauce and serve immediately. Enjoy!
