As the night's get cooler, this Potato & Leek Soup will become a family favourite.
Directions
In a large saucepan, heat the oil, then add the onion, leek, celery and garlic. Cook until softened.
Add the potatoes and stock and bring to the boil. Reduce heat to a simmer and cook until potatoes are very soft.
Add almond milk and blend until smooth.
Transfer to a serving bowl, season with salt and pepper to taste and sprinkle with roughly chopped chives. Serve hot
