In a large bowl add the grated zucchini and season with salt. Mix well and set aside for 15 mins.
Then squeeze the Zucchini mixture and drain out the liquid.
Add the chopped onion and the flour to the zucchini mixture and stir well until fully combined. Scoop zucchini mixture into small balls and gently flatten each one so its flat.
Add oil to a large pan and heat on medium-high. Once oil is heated, add a few zucchini fritters at a time and cook for 1-2 mins or until golden brown. Flip and check both sides are evenly browned.
Remove from oil and place fritters on a paper towel to absorb excess oil. Repeat with remaining fritters until all cooked. Serve Immediately. Enjoy!
