Delicious with lentils, pan-roasted tomatoes and broccoli as well as fresh avocado and spinach.

Super quick, super easy and super yum!
This is a super fast and easy recipe to prepare. First thing, rinse your lentils so they're ready in advance. Next heat a large pan and add the broccoli and a little of the stock and cook stirring until it goes a brighter green (about 1 minute). Add the tomatoes and the rest of the stock and the spinach over the top, put a lid on top and keep warm on a low heat until the spinach collapses.
In another pan, pour in the lentils and stir in paprika and cumin for 2 minutes, then mix a little of your dressing in.
Now you're ready to build you bowl! Place the lentils in then the spinach and lastly the broccoli and tomatoes. The avocado goes on top and the dressing can be added at the table. Enjoy! This healthy, easy and delicious meal :)
Optional extras are black sesame seeds, different types of dressings and of course - feel free to add in other colours! Grated red cabbage, grated beetroot, grated carrot, peas...
It's also really good over the top of a pile of soft green lettuce :)
