First, soak cashews in the water. Squeeze ½ the lemon into this. Bring this mixture to a boil. Then cover and remove from the heat and leave it covered for 30 mins. Drain the water out of the pan, softened cashews are now ready to be used
Melt the coconut oil by placing the coconut oil in a microwave safe dish and microwave for 10-20 seconds
Add the soaked cashews, the coconut milk, maple syrup, melted coconut oil, vanilla extract, cardamom, and the seeds and pulp from 1 passionfruit into a blender. Blend on high until creamy and smooth
Divide the mixture up between two glass bowls or jars. Cover the bowls/jars and chill for at least 2 hours
Serve with coconut whipped cream and more passionfruit pulp and seeds! Enjoy!!
