This easy Garlic Mashed Cauliflower recipe is the perfect side dish to lighten up a heavy meal.
Directions
Fill a large saucepan with water and bring to the boil. Place a steamer basked on top and add the cauliflower florets.
Reduce heat to a simmer and cover, steam cauliflower for about 8 mins, or until tender. Drain the cauliflower and transfer to a blender.
Add the roasted garlic, rosemary, almond milk, nutritional yeast and oil. Salt and pepper to taste. Blend until smooth or to your desired texture.
Serve and garnish with chopped spring onion. Enjoy!
