Place the cauliflower in a baking dish and sprinkle with mixed spices, garlic, olive oil and cayenne pepper. Season with salt and pepper. Toss and coat well, and place in the oven until tender (about 25 mins) and slightly golden brown.
Once the cauliflower is cooked, place in a large bowl and add the coriander and parsley, pomegranate seeds and pistachios.
