Preheat oven to 175 degrees. Lightly coat a baking dish with non stick spray. Arrange peaches comfortably side by side, cut side up, ensuring not too much room around them.
In a medium bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon and salt. Spoon the mixture over the peaches, filling the centre and letting it run over the sides.
Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 mins. Serve topped with vegan vanilla icecream or greek yogurt. Enjoy!
