Preheat oven to 200 degrees c. Bring a large pot of water to a boil and salt well. Add beans and cook for 5 mins. Drain and place in ice water to stop cooking. Drain and set aside.
To make the sauce - In a large pan over a medium heat, add olive oil, spring onion and garlic. Season with salt and pepper and stir. Cook for 2-3 mins, then add mushrooms. Cook for further 3-4 mins or until lightly browned.
Sprinkle in flour, stir to coat the veggies. Cook for 1 min, then slowly add in vegetable stock. Add almond milk and whisk to stir. Season with salt and pepper, and bring to a simmer. Reduce heat to thicken. Cook for 5-7 mins, or until thick and bubbly.
Remove from heat. Add ½ cup of the fried onions and green beans. Toss to coat and top with the remaining fried onions.
Bake for 15 mins, and slightly browned on top. Serve immediately. YUM!
