This tangy Mojo Verde is fresh and vibrant and you can add it to just about anything.
2 cups coriander
2 cloves garlic, chopped
1 tbsp white wine vinegar
⅓ cup light extra virgin olive oil
¾ tsp ground cumin
¼ tsp salt
¼ avocado, optional
1 green chilli, roughly chopped
Place all ingredients, except the olive oil, into a blender
With the blender on low, drizzle the olive oil into ingredients until all combined into a smooth sauce - enjoy!
