Perfect for those looking for a healthy alternative to the traditional pizza, these yummy mini zucchini bites are easy to make and packed with flavour.
½ cup pasta sauce
½ cup vegan mozzarella cheese
2 tsp olive oil
salt and pepper to taste
Preheat the oven to 175 degrees
Wash the zucchini and then cut into ¼ inch thick rounds. Once sliced, add the zucchini to a large bowl, drizzle with a little olive oil to coat and sprinkle with salt and pepper. Mix well.
Line a baking tray with baking paper and place the zucchini slices on the baking sheet. Place in the oven for 3 mins. Remove from the oven, flip them over then cook for another 3 mins.
Remove from the oven and add the sauce, mozzarella cheese and your favourite pizza toppings on top of the zucchini slices.
Place back in the oven for 3-4 mins and cook until the cheese melts. Enjoy!
