Mexican Baked Potatoes

Ingredients

• 2 Large Potatoes

• 1 400g can Chopped Tomatoes or freshly chopped

• 1 400g can Black Beans

• 1 Sweetcorn - Kernels

• 1/2 cup of Salsa

• 2 Spring Onions - chopped

• 1 Sprig of Coriander for garnish
