A delicious Italian side dish, artichoke hearts with lemon and garlic.

Serve as a side dish, appertiser or can be added to a salad or pasta.
4 fresh artichokes
3-4 lemon peels
1 garlic clove, finely diced
a pinch of sea salt
a pinch of black pepper
½ lemon, juice only
Peel and prepare artichokes, cut the hearts into quarters.
Add Olive oil to a large frying pan, once hot, add the artichokes and lemon peel. Stir and cook for 2 mins.
Bring the heat down to medium, add garlic and salt and pepper. Stir and cook for 2-3 mins
Drizzle with juice from half a lemon and serve with extra lemon on the side. Enjoy!
You might like to add anchovies at step 3 for a lovely salty touch
