Add beetroot to a large pot and cover with water. Boil for 30-40 minutes - until fork tender. Or you can microwave them for just a few minutes!
Chop into thick chunks and combine them in a mixing bowl with the remaining ingredients. Serve at once or cover and chill before serving.
