Place oil in a pan over medium heat, add chopped fennel. Stir and cook for about 5 mins until softens
Add the diced zucchini and season with salt and pepper to taste. Cook for about 5 mins or until both zucchini and fennel are softened and liquid evaporated, or until turns golden and starts to crisp.
Add the fresh thyme and stir. Enjoy!
