Using a hot grill pan or your oven set to grill. Start with grilling the zucchini, when it's just starting to char add the chopped tomatoes and corn, stirring frequently until all is charred, keep an eye on it!
Stir in the rocket and squeezed lemon juice along with salt and pepper to taste and place in serving bowl.
