Crispy golden bites that are perfectly salty and delicious!
Directions
Dice the eggplant. Cover in salt and leave for 20 mins.
Wash of the salt. Dry the eggplant with paper towel. Coat in flour, then in panko breadcrumbs.
Fill a pot with frying oil and heat to 170 C. Fry for about 2 mins until golden brown. Remove from oil onto paper towel and salt immediately! Enjoy
