Cook pasta according to directions, adding salt to the water. When the pasta is done, strain it and set it aside
Wash and chop the broccolini. Roughly chop the stems and florets.
In a large skillet, saute the broccolini in the oil. Stir in the minced garlic and cook for another minute. Stir in the pasta and mix well to coat the pasta with garlic.
Season with salt & freshly cracked black pepper and sprinkle on some vegan parmesan cheese. Serve & enjoy :)
