A quick, nourishing noodle bowl with tender pak choy in a creamy, savoury sauce.
Directions
Cook the noodles to packet instructions, then drain and set aside
In a small bowl, mix peanut butter, soy sauce, and hot water until smooth and slightly runny
Heat oil in a pan over medium heat. Add garlic and cook for about 30 seconds until fragrant. Add pak choy and stir fry for 2-3 mins until just wilted
Add the cooked noodles to the pan. Pour in the sauce and toss well to coat everything evenly
Drizzle with sesame oil, and top with chilli, lime juice or spring onions
Recipe Note
You might like to add some tofu, mushrooms or edamame if you want to make it more filling.
