Get your big pan and get it hot hot hot! Add in the onion and cook for about 2 to 3 minutes, until it starts to soften. Pour a little stock to deglaze the pan and stir. Stir in the mushrooms and broccoli. Cook for about 5 to 7 minutes, until the broccoli is tender. Now add in the peas.
Add the cold rice and pour the tamari (or soy sauce) over the rice and cook, stirring frequently, for 3 to 4 minutes, until fried and hot (using a wooden spoon to break up the clumps as it cooks). Adding the stock and sweet chilli sauce as you go.
Garnish with spring onions and peanuts if preferred and serve. Verrrry nice with a glass of white wine!
Recipe Note
For extra protein, add in some chopped Tempeh.
This recipe may also be enjoyed with a little lime squeezed over the top as you serve and some cucumber slices on the side.
