A simple 3-ingredient vegan recipe using sweet corn.
Directions
Mash or blend half of the sweet corn slightly to create a sticky texture, then mix in the remaining corn.
Add flour and salt, stirring until a thick batter forms (add a tablespoon of water if too dry).
Pan-fry spoonfuls of the mixture in a little oil over medium heat until golden on both sides - about 3-4 mins per side.
Recipe Note
Serve hot with tomato sauce, vegan mayo or chilli sauce. Garnish with some chopped spring onion.
