Bright and beautiful - an easy favourite
Satisfy any hunger with this sure to please main course salad
1 Sweet Potato - chopped into bite size pieces
100g Lettuce - torn into pieces
4 Tablespoons of Tahini
Black Beans - 400g cooked or can
Small bunch of Coriander - chopped
1 Orange - each segment cut in half
1 Avocado - sliced
Paprika - 1/2 teaspoon
Garlic Powder - 1/2 teaspoon
Sea Salt and Pepper to taste
Mix the sweet potato with salt, pepper, paprika and garlic powder and place on lined baking tray and cook at 180C for 30 minutes.
While that's cooking, prepare and mix the black beans, orange, coriander and lettuce together and place in serving bowl.
Top with slices of avocado, sweet potato and drizzle with tahini.
This recipe can easily accomodate a squeeze of lemon if you like!
