A delightful side to many dishes.
400g Baby Beetroot
Salt to taste - pinch
Balsamic Vinegar to taste - 1 or 2 Tablespoons
Steam beetroot for 20 minutes.
Once cooled enough, peel the beetroot using rubber gloves (unless you like pink hands!).
Season with a little salt and vinegar and toss through the mint.
