Finely shred cabbage and massage the salt in until it has released its liquid. Once there is enough liquid add contents to a sterilised jar. The liquid needs to be covering the cabbage.
Pop a cabbage leaf on the top and seal jar tightly. Store in a dark cupboard for 1-2 weeks before refridgerating.
