Directions
Preheat the oven to 200 degrees. In a large bowl, drizzle squash with olive oil and season with salt and pepper. Toss
Place squash in a single layer on a baking sheet. Top with vegan parmesan cheese.
Roast in the oven for 12 mins or until squash is tender. Place until the grill for 1-2 mins until cheese is golden and crispy.
Garnish with parsley or fresh herbs , and season with salt and pepper. Serve
Recipe Note
You might like to garnish with parsley, basil or thyme as you prefer.
