After a really hectic day, sometimes all you need is a warm nourishing bowl of tomato soup!

So easy and so delicious!
1 kg mixed tomatoes, cut in half
2 tbsp olive oil
2 cups vegetable stock
Preheat the oven to 180C
Place the tomatoes onto a paper-lined baking tray, drizzle with olive oil & sprinkle with thyme. Season with salt & pepper
Bake for about 45 minutes or until the tomatoes are roasted and starting to caramelise
Remove from the oven and set aside to cool to room temperature
Spoon the tomato mixture into a blender and blend until nice and smooth
Transfer to a large pot on the stove, bring to the boil, add the stock & simmer gently for about 15 minutes.
Remove from the heat and serve immediately. Enjoy
Serve with your favourite crusty toasted vegan bread!
