Peel and chop the Sweet Potatoes into approx 1 inch pieces and spread over a baking tray. Chop the ends of the garlic cloves and crush slightly with the back of your knife, and add these to the tray
Drizzle over the olive oil and sprinkle over salt and pepper and stir so they’re all coated
Place in the oven to roast for 25-30 mins, tossing half way through
Let them cool, then add to a food processor along with the other ingredients and blend until smooth and silky.
Serve drizzled with extra virgin olive oil, sesame seeds and a little paprika. Enjoy!

Try it on crackers or pita chips, or serve it with a mix of raw vegetables such as carrot sticks, celery stalks, trimmed radishes, thin wedges of fennel, and/or broccoli and cauliflower florets
