An easy recipe with the benefit of giving you three veggies in one tasty dish. Plus it's a great one to make in advance.
6 medium thinly sliced potatoes
5 thinly sliced carrots
1 thinly sliced onion
1/2 cup vegetable stock
1 thinly sliced spring onion for garnish
With oven at 180C Place half the potatoes to cover your dish. Next place a layer of carrots, followed by a layer of onion. Top with remaining potato slices.
Pour veggie stock over veggies.
Cover and bake for 50 minutes. Then remove cover and bake until nice and golden, about another 20 minutes.
Garnish with spring onion and serve while it's hot.
You can cheat and use the microwave for the first 50 minutes in the oven just microwave for 10-12 minutes.
A little oil will help it all come off the dish nicely for serving and if you brush a little on top it helps the browning be extra nice!
