In a bowl, mix oats, mandarin pieces or juice, and maple syrup until well combined. Let sit for 5-10 mins so the oats absorb the liquid.
Spoon mixture into lined muffin tines and press down lightly. Bake for 20-25 mins or until golden and set. Let cool before removing. Enjoy warm or cold.
Recipe Note
Instead of maple syrup, you could also try mashed banana/dates for natural sweetness. Top with your favourite - cinnamon or coconut flakes for something fancier. YUM
