Make the dressing - in a small bowl, mix the lime juice, olive oil and honey together. Set aside
Place the sliced onions in a bowl of iced cold water. Set aside for 5-10 mins, then remove the onions and dry them completely
Prepare a serving platter. Sprinkle ½ the amount of chopped mint leaves on the platter, then arrange the orange slices & onions on top. Sprinkle with a pinch of salt, sweet paprika and cinnamon. Spread the pomegranate seeds on top
Drizzle the dressing over the orange pomegranate salad
Top the salad with the remaining fresh mint leaves. Set aside for 5 mins or so before serving - enjoy!
