As the weather starts to change, make the most of the end of the summer fruits and add this easy salad to your dining experience.

A quick, easy and delicious salad making the most of the seasonal summer fruits.
100g rocket leaves
nectarines, cut into wedges
1 tbsp flaked almonds, toasted
200g vegan mozzarella
For the lemon dressing - extra virgin olive oil
juice of 1 small lemon
1 tsp honey
Pinch of sea salt flakes and freshly ground black pepper
Arrange the rocket leaves on a platter. Scatter the nectarine wedges and almonds over the rocket
Tear up the vegan mozzarella with your hands and place on top.
Whisk together the lemon honey dressing ingredients and drizzle the dressing over the salad. Serve immediately
Making the most of the summer fruits, nectarines are definitely up there with being one of my all time favourites.
