In a large pot bring water to the boil and add cut parsnips. Boil for 15-20 mins until tender. Drain and set aside ¼ cup of cooking water for later use.
Place cooked parsnips in a blender and puree until smooth. Add the olive oil and a pinch of nutmeg to taste, and blend, adding reserved water if required until creamy.
Season with salt and pepper and sprinkle with chives before serving. YUM!
