A healthy and hearty meal all the family will love.
200ml coconut milk, canned
1 tbsp curry powder
300g basmati rice
Wash the leeks thoroughly, chop and steam for 15 minutes or until tender. In the meantime, cook the rice according to the instructions on the package.
5 minutes before the rice and the leeks are cooked, add coconut milk and curry powder to a saucepan over medium heat. Stir until well-combined and heat up for 5 minutes.
Once the leeks are cooked, add them to the curry and coconut sauce and toss until evenly coated. Serve curry over the rice and Enjoy!
Already delicious as it is, or you can add other vegetables such as carrots or pumpkin to taste.
