Simple Keto low carb vegetable soup perfect for the chilly Melbourne weather!
Heat butter or coconut oil over medium heat in a saucepan
Once melted, add the chopped leek & cook until softened
Add the chopped broccoli and zucchini. Season with salt & pepper
Cook until starting to soften and brown. Add the stock cubes & pour over water to cover
Bring up the boil & then lower the heat to simmer for 15 to 20 mins or until the vegetables are softened and cooked to your liking
Enjoy your soup as is or blend with hand blender or cool and blend in a regular blender
