Don't knock it till you've tried it! This is a beauty of a salad, not only packing a nutritional punch but great tasting too!
Great introduction to kale here with a little sweetness added in :)
Squeeze the lemon over the kale to coat, then rub in well and let stand 10 minutes.
While the kale stands, grate the carrot, cut the dates into thin slivers and slice the apple. Add them to the kale and sprinkle with walnuts. Use a citrus flavoured dressing is best.
Feel free to replace dates with other fruit like cranberries or dried apricots. And also walnuts can be replaced with almonds or pine nuts.
Also it can be really nice to mix the kale with some lettuce.
