So easy and so tasty! Also freezes really well.
A sustaining soup. Wonderful with good bread!
Chop Onion and peeled pumpkin into 2cm cubes and roast in 200C oven for 25 minutes.
Place pumpkin, onion, ginger, chilli sauce and stock in blender and blend well.
Sprinkle with a little thyme and serve with good bread!
