Just hummus, cherry tomatoes and crisp lettuce for a light and healthy snack or lunch.
Cos Lettuce leaves - whole, washed and dried
Hummus
Cherry tomatoes, halved or quartered
Gently separate and wash the Cos lettuce leaves, pat them dry
Spread a spoonful of hummus down the centre of each leaf
Top with cherry tomato halves. It’s that easy - enjoy!
You might like to add a sprinkle of pepper or chili flakes, squeeze some lemon juice or garnish with your favourite herbs like parsley or mint.
