Line a baking sheet with baking paper. Add chopped chocolate to a heat proof bowl and place over a small saucepan with ½ cup water. Over a medium-low heat, melt chocolate, whilst stirring.
Dip mandarin segment into chocolate. Place onto the baking sheet and continue until segments have been coated.
Sprinkle with chopped pistachios and refrigerate until chocolate is set. Enjoy

You might like to use other nuts, shredded coconut or just sea salt to coat.
