Finely chop the fresh herbs and add to a mixing bowl. Add the diced chilli, minced garlic and vinegar to the chopped herbs.
Season with salt and pepper to taste, then add the olive oil while mixing thoroughly until combined. Set aside

Ideally let the Chimichurri sit for more than 2 hours before using. Recipe can be adjusted to your taste, add more salt, or pepper, or chilli as you like :)
