Cauliflower Parmigiana is a healthy vegetarian twist on the classic Italian pub meal
Directions
Preheat oven to 175c. Place a piece of parchment paper on a baking sheet
Carefully cut the cauliflower into approx 6 steaks. If they fall apart, simply piece them back together after breading
Combine panko, italian breadcrumbs & parmesan cheese in a bowl
Season olive oil generously with salt & pepper. Brush the Cauliflower steaks with olive oil then dredge in the breadcrumbs/cheese combination
Spray with cooking spray to moisten the breadcrumbs. Bake 30-35 mins until golden
Transfer to a clean baking sheet. Top with Passata Sauce as desired and top with mozzarella cheese
Increase temp to 200c. Bake 10 mins or until sauce is heated through & cheese melts. Serve immediately!
