This recipe is fantastic, simple fresh and light and perfect if you want to jazz up any meal with these bright colours and flavours that go so well together.
Bunch of Coriander
20g Olive Oil
1/2 Red Onion (optional)
Use the juice and zest of 1 orange to make a dressing by whisking with a little oil and salt.
Halve carrots lengthways and sliced with a peeler, slice avocado, roughly chop coriander and cut oranges into segments. Thinly slice red onion.
Mix all ingredients together and cover with dressing and serve!
