This humble soup is a star! Cooks up in a flash of some rough chopping and half an hour of simmering. You can get on with then next course while this one cooks itself!
Even the kids will love this one :)
Chop everything into about 2cm pieces and grate the ginger.
Put all ingredients into one large pot and bring to a boil, then simmer for 30 minutes or until all the veggies are super soft. Puree well.
Garnish with a little coriander, sprinkle with pepper and serve with a good bread.
A sweet potato can be added in too - if you like! But then you may need to also add a little more stock too.
