Brighten up everyone's day with cheerful and delicious carrot fritters!
4-5 carrots grated
1 Onion grated
2 cloves garlic finely chopped
2 Tablespoons Curry Powder
1 cup chickpea flour
Sea Salt to taste
1 teaspoon ground Cumin
1 teaspoon ground Coriander
1 Tablespoon Sweet Chilli Sauce
¼ cup Water
1 bunch Coriander chopped
Blitz your onion and carrots in a blender - not too much!
Add. the rest of the ingredients and still very well.
Heat a large fry pan, add a little oil then add dollops of carrot batter and flatten a little with a fork. Cook until golden brown about 3 mins per side. They're ready to eat - told you it was easy!
