Chop ginger and spring onions. roughly chop broccolini and set aside
In a heavy pot, heat oil. Add ginger and spring onions. Cook until onions are soft. Do not let ginger burn. Add rice and cook stirring often until rice turns milky white
Add broccolini, water (or vegetable stock) and salt. Stir to mix rice with liquid. Bring to boil, then cover and simmer on medium-low for 12-15 mins until most water has been absorbed (always adjust rice cooking time as per packaging instructions)
Take off the heat once rice grain is tender. leave covered for 5-10 mins
Open lid, drizzle rice wine vinegar over the top of the rice. Fluff rice with a fork. garnish with more spring onion and fresh herbs. Serve hot and enjoy!
