An easy salad, colourful and tasty. Great to prepare in advance as it stays fresh.
Also great to use as a salsa inside your tacos or burritos.
Remove the seeds from the capsicums and finely chop.
Drain and rinse the beans
Combine the capsicum, beans, chopped coriander and chopped onion in a bowl.
Put lime juice, cumin, oil in a small bowl and whisk well.
Drizzle dressing over the salad and toss well.
As an alternative you can chop the veggies a bit smaller and you'll have a super salsa!
