Salad made from raw whole food ingredients

2 Beetroot
2 Apples green is best
2 Carrots
1 small bunch of Mint
1 Orange
1 teaspoon Seeded Mustard
Juice the orange and mix with the mustard and set aside. Add some salt and pepper if you like.
Grate or Mandolin the beetroot, carrot and apples and place in a large bowl.
Chop the mint roughly and add in too.
Pour the dressing over and toss to combine.
Place into a smaller bowl for serving.
This sweet and crunchy salad lasts well, so feel free to refrigerate any left overs.
Also adding in some fennel can give an extra zing!
