Heat vegan butter in a medium heavy based pan. Add the rice and stir fry over low heat for 10 mins or until golden
Add the stock, salt and pepper. Slowly bring to the boil, stirring constantly. Reduce heat and simmer, covered, for 20 mins. Cover and set aside
Heat the oil in a small pan. Add the onion and stir fry over medium heat for 5 mins. Add spinach, reduce heat and cook, covered, for 5-10 mins or until spinach is hot. Add spring onion and stir for 1 min. Add the spinach mixture to the rice. Stir until heated through. Enjoy!
