Peel and cut the parsnips, place in a bowl & drizzle with olive oil. Sprinkle with spices, salt & pepper & coat evenly
Place a piece of baking paper on a flat baking tray and grease with olive oil. Spread the parsnips and bake for 20-25 mins until golden brown
Serve sprinkled with fresh parsley and a little lemon zest or other fresh herbs

Parsnips are low in calories and rich in fibre. They're a great source of potassium and antioxidants. Lovely roasted in just a little oil, salt and pepper, but delicious with either honey, maple syrup, mustard and of course, garlic and chilli
